After 13 years as an assistant director for Fox Sports, Ashley joined the family business and has held numerous leadership positions. At the age of 25, she led the construction of The Village at Pocono Raceway, a large-scale accommodations development for visitors, alongside her grandfather, Dr. Joe Mattioli, who founded Pocono Raceway in the 1960’s.
Ashley was diagnosed with gastroparesis in her early 20s, which causes extreme pain when consuming many foods. After researching the benefits of consuming a diet rich in organic foods and plant-based supplements, she adapted healthy clean eating as part of her lifestyle and saw that it delivered undeniable health results.
Her vision and passion for how organic food could be used as medicine to help others live a healthier and fulfilling life was the catalyst for founding Pocono Organics, one of the largest regenerative organic farms in North America. In partnership with Rodale Institute, Pocono Organics is a global center for research, education, and discovery.
She was a founding member of the Northeastern Pennsylvania Professional Women in Construction organization and named one of the Top 25 Women in Business in Northeastern Pennsylvania (NEPA). In 2019, Pocono Organics received the Environmental Innovator of the Year Award from the Green Sports Alliance, a very prestigious award to receive in the industry
Today, Ashley is the President and Founder of Pocono Organics as well as Secretary/Treasurer of Pocono Raceway. She lives in Ventnor City, New Jersey, with her husband, Frank, and young son, Frankie, Jr.
